This is from Khym Lam's Eating In. A simple tasty meal with the wonderful texture of bean thread noodles.
1 serve bean thread noodles
1/2 cup lean pork tenderloin, sliced
2 tsp light soy
1 tblsp vegetable oil
Mix together:
1 tblsp light soy
2 tsp tahini
1 tsp fish sauce
2 tsp Chinese cooking wine or sherry
1 tsp sugar
3/4 cup chicken stock
Soak bean thread noodles in hot water for 5 mins, drain. Mix pork with the 2 tsp light soy, set aside. Heat oil in a wok and fry the pork for 1 minute. Add the sauce ingredients and bring to the boil. Add drained noodles to wok. Cook a further 5 minutes or until noodles absorb liquid. Garnish with spring onions.
Additions: Bean sprouts, snake beans, or julienned zucchini added to the simmering sauce.
