Some folks don't liked canned tuna. I like canned tuna. I also like beans and avocado and this recipe combines all three. Courtesy of the Queensland Govt Find Your 30 healthy living campaign.
TUNA & AVOCADO SALAD
Ingredients
10 minutes preparation
+ 5 serves of vegies in this recipe

315g can tuna in spring water, drained
300g can cannellini or butter beans, drained
1 tomato, chopped
1 avocado, skin and pip removed and chopped
Dressing
Juice of ½ lemon
1 teaspoon grated lemon rind
1 tablespoon chopped basil
2 tablespoons low fat natural yoghurt
Freshly ground or cracked black pepper, to taste
In a bowl lightly fold tuna, beans, tomato and avocado. In a small bowl mix all dressing ingredients together and pour over tuna mixture. Serves 4.

Tuna Pasta Bake
This recipe is from the back of Campbell's Cream of Celery condensed soup (with a couple of my own modifications), and I've made it many times.
1 tbsp oil
1 onion, finely chopped
1/2 green capsicum, diced
1 x 410g can Campbell's Condensed Cream of Celery soup
425g can tuna, drained
250g dried large shell pasta, cooked and drained
1 1/2 cups grated tasty cheese
1. Preheat oven 200 deg Celsius. Lightly grease an 8-cup (2L) capacity ovenproof dish.
2. Heat oil in a large frying pan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes or until onion is soft.
3. In a large bowl mix onion, capsicum, soup, tuna, pasta and most of the cheese until combined then place into prepared ovenproof dish. Sprinkle with remaining cheese and bake for 20 minutes or until golden brown.

Tuna Fritatta
6 eggs
1/2 cup grated low fat tasty cheese
1 tablespoon parmesan cheese (optional)
1 tablespoon plain flour
medium tin tuna
medium onion, chopped
1 zucchini, grated,
small can corn
1/2 cup sliced olives
salt/pepper, herbs to taste
Method:
Preheat oven to 180C (moderate)
Chop onion and grate zucchini (or other choice of vegetables)
Beat eggs in bowl. Add cheese, flour and remaining ingredients
Pour mixture into greased pie dish
Bake in a moderate oven for 25 – 30 minutes or until golden brown
Serves four.
TIPS:
Use any vegetables or meat you have handy. Capsicum is very nice and a traditional Italian ingredient used in Fritattas. Sweet potato is tasty and great for people with Diabetes.
You can vary the amount and type of cheese used in the dish. Ricotta is nice.

Baby Spinach and Tuna Pasta
This was an impromptu meal we had one evening; had a heap of baby spinach and wanted to use it up while it was still fresh!
I added a couple of handfuls of spiral pasta to a pan of boiling water, cooked to al dente and drained.
Pasta back into the pan, stirred through a tin of tomato and onion flavoured sandwich tuna, a handful of washed baby spinach, and some sliced roasted peppers. Covered the pan for a few minutes until spinach leaves started to wilt, then served.
Would have been nice with a bit of cracked pepper and some shaved parmesan as well.
