Pita Bread

1 tblsp dry yeast
1/2 tsp sugar
1 tblsp olive oil
1 cup (250ml) warm water
2 1/2 cups plain flour
1/2 tsp salt

1. Mix together the yeast, sugar, oil and water in a large bowl, stir until the yeast is dissolved. Stir in 1 cup of the flour and beat with a spoon for 2 minutes.
2. Gradually stir in the remaining flour and salt and mix well to form a soft dough. Knead on a lightly floured surface for 5 minutes until smooth and elastic. Cover and leave in a warm place about 40 minutes until doubled in size.
3. Divide the dough into 8 portions and gently knead each portion. Roll each portion into a 16 cm round. Place on lightly grease oven trays and stand about 20 minutes until doubled in height. Bake in a hot oven about 5 to 8 minutes until puffed and lightly coloured. Allow to cool slightly, then wrap in plastic to stop them going crisp. Makes 8.
