2 tablespoons of oil
500g diced beef, or lamb, or chicken
1 large onion, chopped
2 cloves garlic, crushed
2 tablespoons Clive of India Curry powder
1 400 g can chopped tomatoes
1 275 g gram coconut cream ( light )
fresh herbs to garnish
Roti or Chappati or Rice to compliment
In a frypan/wok, heat the oil. Brown the meat and remove from the pan. Fry the onion and garlic in a little oil until translucent. Add the Clive of India Curry powder, fry and stir for 2 minutes and replace the meat. Add the can of chopped tomatoes, stir and cook for 5 minutes. Add the coconut cream, stir and simmer for 15 - 30 minutes. Serve with Rice, Roti/Chapatti or Naan and garnish with fresh herbs.
