Impossible Pie

One of my favourite desserts as a kid, with a lovely egg custard centre.

4 eggs
2 tblsp melted butter
1/2 cup plain flour
2 cups milk
1 cup coconut
1 cup sugar
2 teaspoons vanilla essence

Blend all ingredients and pour into greased pie dish. Bake at 180C for one hour.

mmmmm! this looks lovely...I had only ever had a savoury one which we used to make on the farm I worked on in Qld to use up all the ingredients in the cupboard/fridge before shopping day. Will try this out!
